PAD THAI WITH QUINOA
INGREDIENTS:
100 grams quinoa
250 grams cleaned gambas or tofu
4 tablespoons tamarind paste
3 tablespoons fish sauce
2 tablespoons palm sugar
4 tablespoons coconut oil
3 cloves garlic
2 eggs
A bunch of Chinese chives
1/2 teaspoon chili flakes
3 tablespoons roasted peanuts
180 grams bean sprouts
1 chili pepper
1 lime
this recipe is for 4 persons
PREPARATION:
1) Cook the quinoa according to the package description. Chop the peanuts and the garlic. Cut the Chines chives in 2 cm pieces. Cut open the chili pepper in length, remove the seeds and slice the pepper. Cut the lime in even parts.
2) Mix the tamarind paste, the fish sauce, the palm sugar and the chili flakes in a bowl. Heat up the oil in a wok or frying pan and stir fry the garlic on medium heat until golden brown. Add the gambas and fry them for 1 minute on high heat.

4) Add the tamarind mixture and stir fry until everything’s cooked. Put the gambas back in the pan and fry them along for 1 minute.
5) Serve the pad thai in a bowl. Garnish with the roasted peanuts, chili pepper and lime parts.
