Fluffy quinoa pancakes
Pancakes are the go-to guilty pleasure for lots of people, but with a few little twist, these fluffy pieces of heaven don’t have to be unhealthy at all. Blogger @healthyfoodlove came up with this tasty variation with quinoa and coconut.
INGREDIENTS:
100 gram quinoa flakes
100 gram buckwheat flour
50 gram grated coconut
2 teaspoons baking powder
Pinch of cinnamon
330 milliliter (vegetable) milk
2 eggs
Coconut oil
Dash of vanilla extract
Toppings like apple syrup, peanutbutter, blueberries, dates…
this recipe is for 10 pancakes
PREPARATION:
1) Mix the quinoa flakes, the flour, the baking powder, the grated coconut and the cinnamon in a bowl.
2) Mix the milk, the egg and the vanilla in a different bowl. Add this to the quinoa mix and stir until you have a nice batter.
3) Melt a little coconut oil in a frying pan on medium temperature.
4) Scoop a spoonful of batter in the pan and fry on one side until the top starts to look bubbly. Flip the pancake and fry on the other side until golden brown. Repeat with the rest of the batter.
5) Serve the pancakes with your favourite topping.
