Quinoa bolognese
An original take on a true classic by @madebymarique. She created a twist on spaghetti bolognese and replaced the spaghetti with quinoa. This recipe is inspired by her picture. Just as good as the famous Italian dish but without the hassle of pasta strings that just refuse to wrap around your fork
INGREDIENTS:
200 gram quinoa tricolore
Olive oil
2 onions
2 garlic cloves
300 gram vegetarian mince
1 vegetable stock cube
1 small winter carrot
1 green pepper
4 stalks celery
600 gram canned tomato cubes
1 dash red wine
50 gram parmesan cheese (optional)
this recipe is for 4 portions
PREPARATION:
1) Cook the quinoa according to the package description.
2) Chop up the onions and the garlic and dice the carrot, the pepper and the celery.
3) Heat up the olive oil and fodder the onion and the garlic.
4) Deglaze with a dash of red wine.
5) Add the vegetarian mince and stir well. After 2 minutes, crumble the stock cube the sauce.
6) Add the diced vegetables. Fry for 2 minutes and also add the tomato cubes.
7) Let simmer for 15 minutes and stir regularly.
8) Serve the quinoa with the bolognese sauce and optionally grate some cheese over your dish.
