Peanut butter quinoa cups
SuperVood’s Laura knows it doesn’t take much to cook a nice little snack. With only a few ingredients she made these great peanut butter quinoa cups; a delicious, gluten free, guilty pleasure!
INGREDIENTS:
40 gram quinoa puffs
40 gram oatmeal
3 tablespoons peanut butter
2 tablespoons coconut oil
2 tablespoons maple syrup
120 gram dark chocolate
Necessities:
Paper muffin molds
this recipe is for 8 portions
PREPARATION:
1) Put the quinoa puffs and the oatmeal in a bowl.
2) Melt the coconut oil in a small pan and add the peanut butter and maple syrup. Stir until you have a smooth blend.
3) Pour the mix over the quinoa and stir well.
4) Divide your quinoa mix over 8 muffin molds. Fill up the molds for about 3/4 and and press with a spoon.
5) Melt the chocolate au bain marie.
6) Pour a tablespoon of chocolate in every cup. Put in the fridge firm up for at least 2 hours.
