Mango salad with crunchy quinoa

INGREDIENTS:
100 gram quinoa
4 handfuls sesame seeds
15 radishes
1 cucumber
15 sun-dried tomatoes
4 branches parsley
200 gram feta cheese
150 gram corn salad
2 avocados
4 tablespoons light Greek yoghurt
1 lemon
Chili flakes
Salt

PREPARATION:
1) Pre-heat the oven to 180 degrees. Cook the quinoa according to the package description and let drain. Spread the quinoa over a baking paper covered baking tray and put in the over for 35 minutes. Shake up every 10 minutes.
2) Roast the sesame seeds in a frying pan. Cut the radishes into pieces and dice the mango and the cucumber.
3) Cut the sun-dried tomatoes, chop up the parsley and crumble the feta
4) Make an avocado dressing: puree the avocados with a blend and mix with the Greek yoghurt and juice of the lemon. Season with chili flakes and salt.
5) Put all the ingredients, except for the dressing, in a salad bowl. Mix the salad and pour the dressing over it.
