Quinoa salad with grilled vegetables and burrata

The fresh vegetables and the creamy burrata in this healthy salad makes the hidden Italian in you feel even more Italian!
INGREDIENTS:
150 gram quinoa
300 gram burrata
1 ciabatta bread
30 gram sun-dried tomatoes
1 eggplant
2 zucchinis
1 teaspoon thyme
1 bunch parsley
1 lemon
25 gram pumpkin seeds
Olive oil
Pepper and salt
PREPARATION:
1) Cook the quinoa according to the package description and drain the burrata.
2) Slice the eggplant and zucchinis and put them in a bowl. Smear the slices with some olive oil and season with pepper and salt.
3) Heat up the grill pan and grill the eggplant and zucchini 5 minutes on each side.
4) Put the quinoa, the sun-dried tomatoes and the grilled eggplant and zucchini in a salad bowl.
5) Roast the pumpkin seeds in a frying pan and let them cool. Chop the parsley.
6) Cut the burrata. Add the burrata, the parsley and the thyme to the salad.
7) Make a dressing with to tablespoons olive oil, lemon juice, peper and salt.
8) Pour the dressing over the salad and sprinkle the pumpkin seeds over it. Serve the salad with ciabatta slices on the side.
