Fresh corn salad with red cabbage

This fresh salad is a delicious addition to any barbecue or picknick. Even looking at it will cheer you up, so Imagine what’ll happen if you take a bite!
INGREDIENTS:
150 gram quinoa
100 gram radishes
400 gram canned corn
1 ripe mango
1 cucumber
2 ripe avocados
100 gram pre-cut raw red cabbage
150 gram fresh goat cheese
1 lime
2 tablespoons balsamico dressing
1 tablespoon olive oil extra vergine
Pepper and salt
PREPARATION:
1) Cook the quinoa according to the package description.
2) Drain the corn and put in a salad bowl. Add the raw red cabbage to the bowl.
3) Slice the radishes and cucumber and add to the corn and the cabbage.
4) Half the avocados and dice them. Also dice the mango.
5) Put the avocado and mango in the bowl and add the cooked quinoa. Squeeze half a lime over the salad.
6) Mix the the juice of the other lime half with the olive oil and the balsamico dressing. Season with salt and pepper.
7) Add the dressing to the salad and crumble the goat cheese over it.
