Tortillas with quinoa salad

Looking for a tasty lunch recipe and not really feeling the regular sandwich or salad? Try these delicious tortillas with quinoa for a change! The beans and quinoa will give you that full feeling and the use of hüttekase instead of the usual feta makes this recipe very lean as well.
INGREDIENTS:
150 grams precooked quinoa
8 small tortilla wraps
300 grams kidney beans
150 grams corn
1 avocado
150 grams pre-cut raw red cabbage
200 grams hüttekase
1 small bunch cilantro
Dressing ingredients
1 lime
1 tablespoon olive oil
Pepper
Salt
PREPARATION:
1) Cook the precooked quinoa according to the package description.
2) Finely chop the cilantro.
3) Mix the juice of the lime, the olive oil and a pinch of salt and pepper in a small bowl.
4) Mix the quinoa, kidney beans and corn in a bowl. Dice the avocado and add to the mix.
5) Add the red cabbage and cilantro.
6) Pour the dressing over the quinoa mix and stir well.
7) Spread some hüttekase over the tortilla wraps (about two per person). Add some quinoa salad and fold the wraps. Enjoy your meal!
