Sushicake with Quinoa
Who doesn’t love sushi? Such a pity it’s so hard to make at home… But not this sushi cake with quinoa! You’ll be ready for some sushi goodness in no time. Next to that, you’ll impress others, because this cake also looks very good.
Ingrediënts
150 grams cooked quinoa
4 crab sticks (could be replaced with tofu)
50 grams seaweed
100 grams soybeans
1 avocado
1/2 cucumber
1 tablespoon sesame seeds
2 tablespoons mayonaise
1 tablespoon wasabi
2 tablespoons soy sauce

Small springform pan
this recipe is for 2 people
PREPARATION:
1) Cook the quinoa according to the package description.
2) Mix the quinoa with the mayonaise and the wasabi in a big bowl.
3) Slice the cucumber, radishes and avocado.
4) Put a layer of quinoa in the springform and press firmly.
5) Add a layer of cucumber.
6) Add another layer of quinoa and press firmly again.
7) Remove the side of the springform pan. Leave the bottom under the cake.
8) Garnish the cake with the crabstick or tofu, avocado, cucumber, radishes, soybeans and seaweed.
9) Sprinkle some sesame seeds over the cake.
10) Serve with soy sauce.
