Chili sin carne with quinoa
As the Spanish name implies, there is no meat in this chili sin carne and you will not miss it at all! The delicious herbs in this dish will stimulate your taste buds and warm your soul. Comfort food it is!
Ingredients
100 grams of uncooked quinoa
2 small red onions
3 cloves of garlic pressed
2 peppers in different colours
1 tablespoon 7 spices mix
1 tablespoon of chili powder
1 teaspoon of paprika
1 half teaspoon cayenne powder
A bit of cinnamon
500 grams of tomato passata
1 can of tomato paste
500 grams of kidney beans
300 grams of corn kernels
200 grams of vegetarian minced meat
Fresh parsley
Tortilla chips
Olive oil
For the guacamole
3 avocados
1 lime
2 cloves of garlic
1 chili pepper
1 teaspoon of paprika
Pepper and salt

PREPARATION:
1) Cook the quinoa according to the instructions on the package.
2) Heat 1 spoon of oil in the frying pan and fry the cut onions and pressed garlic on a medium fire. Stir it for a while (+/- 3 min).
3) Add the peppers and fry briefly. Then put all the spices with the tomato paste and tomato passata in the pan. -- Then put all the spices into the pan and after that the tomato paste and tomato passata.
4) Bake the vegetarian minced meat in a separate pan and add it to the rest of the ingredients after you’ve fried it for 2 minutes. Finally, add the beans. Let it simmer for 5 minutes.
5) In the meantime, peel the avocado and put it into the food processor, along with the squeezed lime juice, garlic, chilli pepper in pieces and some paprika powder. Season with salt and pepper.
6) Serve the chili with quinoa, tortilla chips and some guacamole on the side or stir some of the guacamole through the chili. Finally, chop some parsley and garnish the chili with these herbs.
