BBQ halloumi skewers with quinoa salad
Lovely weathers simply screams ‘outside cooking’! But what if you’re not a fan of meat on your barbecue? Salty halloumi is a perfect meat substitute and only gets better with the smoky goodness of a hot barbecue.
Ingredients
200 gram quinoa
300 gram lentils
225 gram halloumi
1/2 red pepper
1/2 lime
1/2 bunch parsley
1 bunch mint
200 gram cherry tomatoes
100 gram sun-dried tomatoes
Dressing ingredients
3 tablespoons olive oil
1/2 lime
1/2 bunch parsley
Pepper
Salt

PREPARATION:
1) Fire up the barbecue and start preparing the ingredients.
2) Dice the halloumi and thread the cheese onto skewers. Thread the cherry tomatoes onto skewers as well.
3) Cook the quinoa according to the package description.
4) Put the cherry tomato skewers on the barbecue and chop up the parsley, the mint and the red pepper.
5) Put half of the parsley in a bowl. Squeeze the lime. Pour the olive oil and the lime juice over the parsley. Season with salt and pepper and stir the dressing.
6) Put the halloumi skewers on the barbecue. Cut the sun-dried tomatoes and them, together with the lentils, to the quinoa. Now add the red pepper and the chopped herbs. Stir well.
7) Pour the dressing over the salad. Serve the salad with the halloumi and cherry tomato skewers.
