Green quinoa salad

Only green vegetables allowed in this salad! Boring you say? Absolutely not! All the different veggies en herbs create a tasty, refreshing sensation in your mouth!

Ingrediënts

150 gram quinoa
100 gram broccolini
1 zucchini
1/2 avocado
1 cucumber
1 bunch mint
1 spring onion
50 gram green garlic olives with feta

Dressing ingredients

1 lime
1 tablespoon olive oil
1 tablespoon balsamic vinegar
Salt
Pepper
this recipe is 2-3 people

PREPARATION:

1) Cook the quinoa according to the package description en cook the broccolini al dente. Let them cool.
2) Slice the zucchini and fry the slices in a grill pan. Let cool down.
3) Finely chop the mint and spring onion. Dice the cucumber and avocado.
4) Mix the quinoa, broccolini, zucchini, cucumber, avocado and herbs in a bowl.
5) Squeeze the lime. Make a dressing with the olive oil, lime juice, balsamic vinegar, salt and pepper.
6) Pour the dressing over the salad and garnish with the olives. Enjoy your meal!
