Healthy Oreo’s with quinoa flakes
Alright, we’ll admit: buying Oreo’s in the supermarket is easier. But making them yourself is a lot more fun and, bold statement incoming, better tasting as well!
INGREDIENTS:
60 gram quinoa flakes
40 gram cocoa
30 gram Stevia
1 teaspoon baking powder
1 teaspoon vanilla powder
Salt
40 gram coconut oil
2 tablespoons honey
3 tablespoons almond milk
Filling:
100 gram powdered sugar
60 gram melted coconut oil
2 teaspoons grated coconut
The recipe is for 10 cookies
PREPARATION:
1) Put the quinoa flakes, the cocoa, the Stevia, the baking powder and a pinch of salt in a big bowl. Stir well.
2) Put the vanilla powder, a pinch of salt, the coconut oil, the honey and almond milk in a different bowl. Stir well and add the mixture to the quinoa flakes bowl.
3) Knead the mixture until it’s a sturdy dough. Form a big ball and put it in the fridge for 30 minutes. Pre-heat the over to 140 degrees.
4) Mix the filling ingredients together and set aside.
5) Remove the dough from the fridge and form smaller balls. Put them on a baking paper covered tray.
6) Flatten the dough balls to round cookies and bake them for 20 minutes. Remove the cookies from the over and let them cool down for at least 15 minutes.
7) Spread a layer of filling over half of the cookies and put the other half on top. Keep the Oreo’s in the fridge for a solid filling.
