Pumpkin spice halloween cake with quinoa flakes

October is here and that can only mean one thing: Halloween! A whole month of shivering, creeping and… eating pumpkin! This pumpkin cake is terrifyingly tasty!

INGREDIENTS:

200 gram quinoa flakes
85 gram almond flour
150 gram light orange flavored yoghurt
3 bananas
3 eggs
2 tablespoons honey
2 teaspoons baking powder
3 teaspoons pumpkin pie spice
125 gram pumpkin puree
50 gram crushed walnuts
Coconut oil

NECCESITIES:

Cake pan
The recipe is for 10 portions

PREPARATION:

1) Pre-heat the oven to 200 degrees.
2) Mix the quinoa flakes, the almond flour and the yoghurt in a big bowl.
3) Mash the bananas through the batter, together with the pumpkin puree and the eggs.
4) Stir the honey, the baking powder, the pumpkin pie spice and the walnuts through the batter.
5) Grease the cake pan with a little coconut oil and pour the batter in the pan. Bake the cake for 20-30 minutes.
6) Take the cake out of the oven and let it cool. Slice the cake and serve with some scary fake insects.
