PANCAKES WITH QUINOA FLAKES
These banana pancakes with quinoa flakes are not only super easy, they're a lot healthier than your regular pancakes as well. A fun Sunday afternoon treat which will please both the kids and yourself.
INGREDIENTS:
3 large eggs
2 ripe bananas
30 grams quinoa flakes
1 tablespoon cinnamon
Coconut oil
NECCESITIES:
Blender / food processor
A spatula (preferably a silicone one, it’ll make flipping the pancakes easier)
this recipe is for 10 large pancakes
PREPARATION:
1) Crack the eggs in the food processor and add the banana in small pieces. Also add the quinoa flakes and the cinnamon. Mix until it's a smooth batter.
2) Heat 1 tablespoon of coconut oil in a frying pan. Use a spoon to pour small portions of batter in the pan.
3) Fry the pancake for 1 to 2 minutes. The batter shouldn't stick to the pan anymore. Flip over and fry for another minute.
4) When all pancakes are done, use different toppings to serve them with. Greek yogurt, raspberry and a bit of powdered sugar for example. Or try some blueberries with coconut flakes and maple syrup.
