Granola with Quinoa
A fan of muesli or cruesli in the morning? Be ready to try this homemade twist: quinoa granola. This granola with quinoa puffs and quinoa seeds is nice, crispy and keeps you well filled until your next meal. Delicious with some (soy) yogurt!
INGREDIENTS:
150 grams quinoa
50 grams quinoa puffs
100 grams oat flakes
30 grams sunflower seeds
50 grams pumpkin seeds
1 tablespoon linseed
3 handfuls of assorted nuts
4 tablespoons maple syrup
4 tablespoons coconut oil
3 teaspoons cinnamon
1 handful of dried apricots
this recipe is for 2 granola Jars
PREPARATION:
1) Preheat the oven to 180 degrees. Cut the apricots into small pieces. Check if your coconut oil is liquid. If not, heat it up in a pan first. Blend all ingredients until they're a sticky mix
2) Spread the mix on a baking sheet and put in the oven for 15 minutes. Stir and turn the granola and bake for another 10 minutes.
