SHAKSHUKA WITH A QUINOA TWIST
Have you heard of Shakshuka? This is an easy to prepare single-pan dish from the Middle-East. It’s traditionally eaten at breakfast, but also works as lunch or for a quick diner after your workout.
INGREDIENTS:
100 grams of cooked Quinoa
Two cloves of garlic
1 red onion
Two or three eggs
A tablespoon of tomato paste
3 fresh tomatoes or 1 tin of chopped tomato
A teaspoon of paprika
A small bunch of parsley
Crumbled feta cheese (about 30 grams per person)
this recipe is for 2-3 people
PREPARATION:
1) Prepare the quinoa as described on the pack is simple
2) Then chop the onion and garlic finely and fry them in olive oil.
3) After 2 minutes add the tomato paste and chopped tomatoes or fresh tomatoes, with a pinch of paprika, pepper, and salt. Stir for 4 minutes.
4) Then crack two to three eggs to the mixture and cover the pan, until the egg yolk has solidified.
5) Remove the pan from the heat and sprinkle with crumbled feta cheese, Quinoa, and plenty of parsley.
